Thanks! We've started getting eggplant in our weekly CSA and the only thing I know how to cook with it is eggplant parm, so I was going to start looking for some recipes, but now I have this week covered. I even already have some of the Bacon Salt.

Yummy!i had to make the bacon salt. im letting them soak on that for 24 hours until i cook them.
